I was making some rice flour based pancakes for my son who can't have wheat. I over did it on the water and the batter was a tad runny. Unfortunately, I was out of pancake mix. So I headed for the cupboards to see what I could do. Here's my solution:
I found a packet of instant Quaker Regular flavored oatmeal. I added it to the mix and the pancakes were saved! My son loved it. And, I figured I was adding in a bit of nutrition. He would never normally eat oatmeal, and it made for a neat twist. You could even get more creative with it by using a flavored oatmeal like Apple Cinnamon. It's an easy way to change pancake flavors. I only had Regular, which has no added sugar, so I he had some pancakes with peanut butter and jelly, and some with chocolate chips which I added to the batter before cooking the last few pancakes.
