Gluten Free Dairy Free Meatloaf Recipe

Gluten Free Dairy Free Meatloaf Recipe. I made this for my daughter who has several allergies and she loved it. My husband, who has eaten the traditional meatloaf, also said this was good. Please note that I did not measure anything so these are estimates. Also, feel free to adjust anything to your liking. The recipe is very flexible.

Ingredients:

1 pound of meatloaf mixture (beef, veal, and pork)
1/2 pound ground lamb 
1/4 cup potato raw
1/4 cup onion
1/4 cup carrot
1 cup vegetables (mixture of red bell pepper, green bell pepper, broccoli)
1 egg
2 T. potato flour
2 T. salsa
3/4 teaspoon salt 
1 dash black pepper 

Directions:

Mince all the vegetables in a food processor. Mix all ingredients. If too wet, add more potato flour. Shape into a loaf and place into a greased loaf pan. Cook for one hour at 350 degrees. Drain grease before serving.
