Gluten Free Potato Chip Chicken Recipe

Gluten Free Potato Chip Chicken Recipe. This recipe is great for the child with food allergies. It is dairy free, gluten free, soy free, nut free...and it tastes good

I never measure anything when I am cooking so I will attempt to explain what I did, but I honestly don't think this one could be messed up!

Ingredients

1 lb. Chicken breast tenderloins
potato chips
1/4 c. olive oil
1/2 c. rice milk
1 egg

Directions

Mix egg and rice milk in a bowl. Crush potato chips on a plate.  Dip chicken in egg/milk mixture.  Coat chicken with crushed potato chips and pan fry in olive oil, turning once until golden brown on each side and chicken is cooked.

From what I've read in the ingredients of potato chips, they nearly always contain Soy--vegetable oil. What potato chips do you use?

I use Lay's Classic potato chips. At the time when I wrote this recipe, these chips did not have corn oil listed as an ingredient. But since then, they now list corn in their ingredients under Vegetable Oil, so this recipe is not corn free. (I now removed corn from the list of "allergens" in this article. Thanks for the heads up.) The chips are soy free, have no preservatives, no msg, and no trans fats. I hope this helps.
