Open-faced chicken sandwiches

These sandwiches are so easy and really good.  That's a combination that can't be beat. Plus, it helps me decide what to do with that leftover rotisserie chicken!  Maybe I will try this same recipe with the leftover turkey after Thanksgiving.


Ingredients
  • white dinner rolls
  • left over rotisserie chicken
  • sliced baby swiss cheese
  • diced onions
  • Light Miracle Whip

Directions
Preheat oven to 400. Slice open the rolls without cutting the whole way through and open the roll like a book.  Top with the rotisserie chicken (pulled into small pieces), a slice of Swiss cheese, and the diced onions.  Bake for 5 minutes, then broil on high for two minutes.  Top with some Light Miracle Whip and fold shut.

Another twist (if you're like my husband and you're not a chicken fan) is to use Trader Joe's Roast Beef in Beef Broth. You can find it in a can, like tuna.  I saute some onions, green peppers and mushroom, add the roast beef (pulled into small pieces) and go from there to build the sandwiches.

I prefer the chicken!

Not quite Quizno's, but pretty good!

These are great for little hands as well since they are the mini sized dinner rolls, not a full size hoagie bun. The broil also gives the roll and nice crunchy texture for the crust.
