Pancake Roll-Ups Recipe. My son loves pancakes and I am a big proponent of big breakfasts. My husband was concerned about all the sugar my son consumed first thing in the morning before school, so I tried a different approach to the pancakes, our newly created Pancake Roll-Ups.

Make your favorite pancake batter more thin than usual, close to the consistency of a crepe.
Cook the pancakes as you normally would.
Spread a thin layer of all natural peanut butter and thinly sliced bananas and roll it up. Or, try a tad of jelly with the peanut butter (low sugar kind or Simply Fruit brand); jelly still has way less sugar than syrup.
You can make a large batch and reheat them them each morning for a quick and easy breakfast! It's a nice portion of protein to start the day!
