It seems like yesterday when I wrote the Trader Joe's Pumpkin Bread review during the Halloween/Fall season. Now that the holidays are upon us, I made my trip to Trader Joe's to see what seasonal treat they had to offer. With some help from the friendly staff, I headed home with the Trader Joe's Gingerbread Cake Mix.
The Trader Joe's Gingerbread Cake Mix is made with molasses and ginger and resembles a ginger infused cake like brownie. I think the mix alone would be good, but I revised it a tad. I added milk chocolate chips to the Gingerbread Cake Mix, and then I frosted it with a cream cheese frosting. The Trader Joes recipe "goddess" at the store suggested a lemon curd mascarpone frosting which sounded awesome, but I would have had to ditch the chocolate chip idea, which I was not willing to do.
Personally, I really enjoyed the Trader Joe's Gingerbread Cake. It was far superior to its not-so-distant cousin, the gingerbread cookie. The Trader Joes Gingerbread Cake was moist, rich, and very well complemented by the chocolate chips and cream cheese frosting. It had a hint of spice to it, but not as overpowering as some of the gingerbread cookies out there.
