Homemade Salsa Recipe
This past Earth Day, my kids planted tomato plants at a Lowe's kids workshop. They grew pretty quick in the little wooden planter, and then we replanted them outside in a nice sunny spot. These four plants have produced so many tomatoes, I did not know what to do with them! We couldn't keep up - we ate salads, tomato salads... and still more tomatoes.
Finally, I went searching for a salsa recipe. I found one that sounded good so I tried it out. I tweaked it a bit. It is definitely tasty, easy and as close to the restaurant style and quality as I could find.
Cooked Tomato Salsa
Homemade Salsa Recipe Ingredients:
- 40 roma tomatoes, peeled, seeded, and coarsely chopped
- 1 small onion chopped
- 1 (4 oz) can diced jalapenos
- 1/2 cup white vinegar
- 1 1/2 teaspoons garlic powder
- 1 1/2 teaspoons ground cumin
- 1 1/2 teaspoons dried oregano
- 1 1/2 teaspoons ground coriander
- salt to taste
- hot pepper sauce to taste
Homemade Salsa Recipe Directions:
Dip the tomatoes in hot boiling water for easy peeling. Seed and dice the tomatoes. Combine all ingredients in a large pot over medium-low heat. Simmer, stirring occasionally, until the salsa reaches your preferred consistency, about 3 hours. Store in refrigerator until using.
