Twice Baked Potato Skins Recipe. I have made my own version of potato skins, but it involved a fry pan and a lot of oil. This sounds like it might be a little less messy. Also, you will have some leftover mashed potatoes with this recipe,
Ingredients
- 2 tablespoons canola oil
- 6 russet potatoes (about 3-4 ounces each), scrubbed well
- 1 teaspoon kosher salt
- 1/4 cup 2% milk
- 2 tablespoons unsalted butter
- 2 ounces reduced-fat cream cheese
- Salt and pepper to taste
- 1 cup shredded reduced-fat cheddar cheese
- 1 cup shredded part-skim mozzarella cheese
- 6 green onions, washed, thinly sliced
- 6 slices bacon, cooked crisp and crumbled
Directions
Preheat oven to 400 degrees. Drizzle the canola oil on a jelly-roll pan or sided baking sheet. Dry the potatoes and place on the baking sheet. Rub the potatoes with oil and sprinkle with salt. Bake 50 minutes to 1 hour or until the potatoes are tender when pierced with a fork.
Remove from the oven; leave the oven on. When cool enough to handle, cut the potatoes in half horizontally. Scoop out most of the potato flesh, leaving about 1/4-inch layer on the bottom and sides. Season the insides of the potatoes and place them back on the baking sheet, cut sides down. Bake about 15 minutes or until the cut sides are nicely browned.
Meanwhile, put the potato flesh in a small saucepan over medium heat. Add the milk, butter and cream cheese. Mash the potatoes until smooth. Season with salt and pepper.
Remove the potato skins from the oven and spread a generous tablespoon or more of the mashed potato mixture in the bottom of each potato skin. Top each with about 1 tablespoon cheddar cheese and 1 tablespoon mozzarella cheese. Return to the oven to melt the cheese, about 5-8 minutes. Just before serving sprinkle with green onion slices and crumbled bacon.
