Healthy Egg White Frittata Recipe – Ingredients include zucchini, onion, garlic, egg whites, grape seed oil, and salt and pepper. 

I love frittatas. They are so many variations for frittata recipes and they always come out fantastic. So have some fun with it.

Here’s my latest try at a healthy version for a frittata using egg whites and vegetables.

Egg White Frittata Recipe Ingredients

  • 1 medium zucchini
  • 1 medium onion
  • 1 tsp. chopped garlic
  • 10 egg whites
  • grapeseed oil
  • salt and pepper to taste

Egg White Frittata Recipe Instructions
Using an oven safe saute pan (I used a 3 Qt. pan), saute the zucchini in the grapeseed oil until soft and browned. Halfway through this, add in the onion and garlic and saute all vegetables together until “caramelized.” Add egg whites and cook on stove top for a couple minutes until it sets. Transfer oven safe saute pan into the oven and cook for another 8-10 minutes at 400 degrees. When it was done, mine had a bubble in the middle that I simply cut a slit into to let out the steam.
