Mushroom White Bean Kale Soup Recipe – This Mushroom White Bean Kale soup is loaded with veggies and also gets a nice protein from the Great Northern beans. I put this together just thinking it was going to be a nice way to get some veggies, but it ended up being pretty tasty! And, it’s so easy to make! Feel free to change up the quantities on each ingredient based on your preferences. These are “guesstimates” as I’ve only made this in a single serving size.
Mushroom White Bean Kale Soup Recipe Ingredients
- 1 cup celery
- 1 cup diced onion
- 1 cup diced carrots
- 2 T olive oil
- 5 white mushrooms, sliced
- 2 cloves garlic minced
- salt to taste
- fresh ground black pepper to taste
- dash of cayenne
- dash of turmeric
- 1 can Great Northern beans, drained and rinsed
- 2 large handfuls Power Trio Organic greens mix (kale, spinach, baby chard)
- 3 cups chicken stock, or enough to cover all the vegetables to the desired
Mushroom White Bean Kale Soup Recipe Directions
Saute celery, onion and carrots in olive oil in a sauce pan until onions are translucent. Add sliced mushrooms, minced garlic and seasonings and saute about 5 minutes more. Add in beans, greens and chicken stock. Simmer for a half hour or more.
