Juicy Lucy Meatloaf Recipe Ingredients
- 1 lb lean ground beef
- 1 lb ground pork
- 1 ½ cups dried bread crumbs or crumbly stuffing mix
- 1/2 cup milk
- 1 (1 ounce) envelope dry onion soup mix
- 2 eggs, beaten
- 1/2 tsp garlic powder
- 1/4 tsp ground black pepper
- 2 ½ cups shredded mozzarella cheese, divided
- ¾ cup pasta sauce
- Parmesan cheese for topping, optional
Juicy Lucy Meatloaf Recipe Cooking Directions
Preheat oven to 350 degrees Fahrenheit. In a large bowl, mix the beef, pork, bread crumbs/stuffing, dry soup mix, milk, eggs, garlic powder, and pepper with your hands until well-combined. Mix in ½ cup of the cheese. Spread half of the meat mixture in a 9×5 non-stick casserole dish. Pat the meat down into an even layer and rectangular shape. Spread 1 1/2 cups cheese on top of the meat mixture. Top with the remaining meat mixture. Bake uncovered for 55 minutes. Remove from oven, spread your favorite pasta sauce on top and top with remaining ½ cup of cheese, put back in oven for about 5 minutes to melt the cheese. Sprinkle with parmesan, if desired.
