While venting to a friend about not knowing what to cook for my daughter anymore these days (because of her multiple food allergies), she told me of an expert that puts together raw food creations. This expert is Beth Wilke. I have been working with Beth and she is a wealth of knowledge. Beth Wilke is owner and president of Raw-For Life, a company devoted to educating health enthusiasts about the natural, whole food nutritional lifestyle.

Beth has agreed to provide us with a raw food recipe or two each month. Here’s the first of many more to come! The following recipe will ‘wow’ your kids tastebuds.

Cantaloupe Granita Smoothie Recipe Ingredients

  • 3C  cubed cantaloupe
  • 1C  filtered water
  • 1/3C  agave
  • 1/4C  lemon juice

Cantaloupe Granita Smoothie Recipe Directions

Combine all ingredients in a high-speed blender and blend until smooth.
Pour into 13×9” baking pan and place in the freezer.  Every 20 minutes, take the pan out and scrape the mix with a fork to break apart the frozen pieces.  Put back into the freezer and repeat until all the liquid is frozen.

Note: can also be poured into popsicle molds or ice cube trays to freeze.
Process the cubes to small pieces in the food processor just before serving if desired.

GRANITAs (ice slush or snow cone typically made with fruit juices) were the earliest forms of ice cream.

Beth offers a series of classes to help individuals achieve their health and weight goals with outstanding results.
