Homemade Soy-Free Sugar-Free Beef Jerky Recipe – I’ve heard mixed messages on soy, but I know it doesn’t agree with me so I was on a mission to find a way to make beef jerky without soy since everything store bought seems to have soy in it as well as preservatives, too much sodium, unnecessary sugars etc. This recipe is a much healthier option for beef jerky. And, what a great snack to grab and go…a nice shot of protein with no unhealthy additives. And, it’s so easy to make!

DIY Beef Jerky Recipe Ingredients (Soy Free / Sugar Free Beef Jerky Recipe)

  • 3 lbs of eye of round
  • 3/4 cup No Soy Soy-Free Sauce / I use I use Organic NoSoy Soy-free Sauce
  • 3 tablespoons Worcestershire sauce
  • 1 teaspoon liquid smoke
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons freshly ground black pepper
  • Add salt to taste (I personally don’t add any and think it is just fine without it)

DIY Beef Jerky Recipe Instructions

In a small bowl, mix everything but the beef. Set aside. Slice the beef horizontally down the middle to make two wide halves. Then cut each (against the grain) into 1/4-inch thick strips. Put all of the strips into a large gallon sized zip top baggie. Pour the sauce mixture over the meat and seal the bag. Distribute the sauce evenly throughout all the meat by moving the bag around so the strips are evenly coated. Set the bag into a bowl or container and pop it in the fridge (this will help catch any leaks if the bag doesn’t have a great seal). Let it marinade for AT LEAST 12 HOURS. Occasionally, you can rotate the bag while it’s marinating since the marinade tends to sink to the bottom.

How to Homemade Beef Jerky using a Toaster Oven Dehydrator

I cook ours using the dehydrator setting on our toaster oven. Ours allows us to set the temp and time. I set it at 140 degrees for 6 1/2 hours and cook it on a dehydrator tray. It’s perfect every time. You can also cook it in the oven. I would try it at 175 degrees for about 4 hours. Be sure to elevate the beef strips by putting them on a wire rack. Place the wire rack on a baking sheet lined with foil for easy cleaning. You may want to flip the jerky strips halfway through cooking. Cooking times may vary depending on the size of the beef strips.

How to Store Homemade Beef Jerky

I store the jerky in the fridge in a sealed container or zip top baggie. We’ve kept it for about a month with no freshness issues.
