Ever since I went on my healthy detox diet, I’ve been looking for the least guilty cheat item that I could find. Well, I found it and I don’t at all consider it to be a sacrifice as one would expect.

These are now my favorite oatmeal cookies. They are made without flour (completely gluten-free), without butter (completely dairy-free), and you might even think they could be considered kind of a healthy dessert option. My only stumbling block – still haven’t figured out how to take out the sugar.

Gluten Free Dairy Free Oatmeal Raisin Cookie Recipe Ingredients

  • 1/4 c. pumpkin butter – ingredients include pumpkin, sugar, honey, lemon juice concentrate, cinnamon, cloves, ginger, nutmeg (I get this at Trader Joes. I think it is a seasonal item; it might be available elsewhere)
  • 3/4 c. sugar
  • 3/4 c. brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/4 tsp baking soda
  • 1 c. sunbutter (sunflower seed butter)
  • 3 c. rolled oats
  • 2 c. raisins
  • 1/2 c. sunflower seeds

Gluten Free Dairy Free Oatmeal Raisin Cookie Recipe Directions
Preheat oven to 350 degrees F. In a large bowl, combine pumpkin butter, sugar and brown sugar until well blended. Add eggs, vanilla, and baking soda and mix well. Add sunbutter and mix. Next, stir in the rolled oats, raisins and sunflower seeds. Place a teaspoonful of the mix onto a lightly greased cookie sheet about 2 inches apart. Cook for 11-13 minutes. I find they cook best on the regular cookie sheet, not the non-stick.
