When I get hungry, I need something easy to grab on the go to keep me going, or I will be grabbing something that will be so unhealthy. A cookie is so easy to grab, but a cookie here and there adds up around the waistline. Maybe this is not the healthiest option, but here’s a great solution for a snack on the go that has a bit of a sweet side to it so you can also curb that junk food craving. My kids love these protein balls, and I don’t feel all too bad about letting them have a few.
Protein Energy Balls Recipe Ingredients
- 3/4 cup dry oatmeal (I use Trader Joe’s Rolled Oats)
- 2/3 cup shredded coconut
- 1/2 cup unsweetened sunbutter (you can also use almond butter, peanut butter, etc.)
- 2/3 cup ground flaxseed
- 1/2 cup dried cranberries
- 1/3 cup honey
- 1/3 cup mini chocolate chips (optional)
Recipe Directions
Mix all the ingredients in a medium sized bowl. Let it chill in the refrigerator for about an hour to get firm for easier molding. Once chilled, form mixture into golf-sized balls. Store in an air-tight container in the fridge.
