Gluten-Free Dairy-Free Chocolate Squares Recipe – low sugar (2g) dessert using cacao chips, honey, SunButter, and gluten-free crispy rice cereal.

I’m always looking for a “dessert” that is not completely unhealthy, but takes care of my craving for something sweet. I tried to snack on the unsweetened cacao chips from Trader Joe’s but they were completely bitter by themselves and definitely did not satisfy my sweet tooth. So, I decided to combine them with some other ingredients and came up with the recipe below.

These are not overly sweet. I tried my best to make it completely free from cane sugar. Unfortunately, I could not find a rice crispy cereal that did not have any sugar. However, the amount used only yields 2g of sugar for the entire batch of 24 squares! I am not used to eating a lot of sugar, so I liked them that way. But, if you’re used to sweeter treats, you may prefer to use a sweetened SunButter to get more sweetness.

Gluten-Free Dairy-Free Chocolate Squares Recipe Ingredients

  • 1 cup unsweetened cacao chips from Trader Joe’s
  • 1/4 – 1/2 cup honey (I used the good stuff…unfiltered raw honey)
  • 1/8 cup unsweetened SunButter from Trader Joe’s
  • 3/4 cup gluten free crispy rice cereal (2g of sugar total for whole recipe)
  • coarse salt (optional)

Gluten-Free Dairy-Free Chocolate Squares Recipe Directions

Melt the chips in microwave or double boiler. I melted mine in the microwave on power level 5 for about 2 1/2 to 3 minutes. Add in the honey, stir. Start with the 1/4 and keep adding for more sweetness as desired. Add in SunButter and stir. Finally, add in the crispy rice cereal and stir. Then, spread out into a rectangle about a quarter inch thick on parchment paper (see pic below). Sprinkle with coarse salt if desired. Put in the fridge to chill and harden. Then cut into squares. I made about 28 squares by cutting seven columns by four rows. Store in an airtight container in the refrigerator.
