Cinco de Mayo Recipes – Mexican Stuffed Shells Recipe

Mexican Stuffed Shells Recipe Ingredients
  • 1 12 oz box of jumbo shells / pasta – I use these
  • 1 cup diced onions
  • 1 teaspoon oil
  • 2 lbs lean ground beef
  • 1 packet of taco seasoning
  • 1 1/2 cups of chile con queso
  • 2 19 oz cans red enchilada sauce
  • 2 8 oz “bricks” of cheese, grated (can be monterery jack, cheddar, colby jack…your favorite cheese for Mexican dishes)
Mexican Stuffed Shells Recipe Directions

Preheat oven to 400 degrees. Cook pasta for about 9 minutes (pre-baking cook time). While pasta is cooking, saute onions in oil until translucent. Add in ground beef and cook. Add in chile con queso. Rinse cooked noodles in cold water and drain. Coat bottom of large baking dish with a layer of enchilada sauce. Fill each shell with a generous amount of the cheesy beef mixture and place in the baking dish. Top with half of the grated cheese, then the remaining sauce until well-covered (there may be some left over), and then the remaining cheese. Cover with foil and cook for 30 minutes. Top with sour cream if desired.

Cinco de Mayo Recipes – Mexican Lasagna Recipe

Mexican Lasagna Recipe Ingredients
  • No bake lasagna noodles from Aldi (Probably doesn’t matter, I just like theirs the best for some reason)
  • 1 lb. ground beef
  • 1 cup refried beans
  • 1/3 cup taco sauce
  • 1/3 taco seasoning packet
  • 12 oz. Colby Jack cheese, grated
  • 2-14oz cans of Enchilada sauce
  • 1/2 onion diced
  • 1/4 c. sliced black olives
  • 2 T. diced green onion
Mexican Lasagna Recipe Cooking Instructions

Preheat oven to 375. Saute ground beef, drain. Add onion and cook until translucent. Add refried beans, taco sauce and taco seasoning and heat through. Spray 9×13 baking dish with non-stick spray. Put down layer of enchilada sauce. Next, top with no-bake noodles. Layer the beef mixture, grated cheese, and more sauce, then noodles again. Repeat. Top last layer of noodles with remaining cheese and sauce. Cook for 50 minutes covered with foil. Remove foil, top with diced green onions and sliced black olives, and cook an additional 5-10 minutes.

Cinco de Mayo Recipes – Homemade Restaurant Style Nachos

Restaurant Style Nachos Ingredients
  • Tortilla Chips (I highly recommend Whole Foods’ homemade tortilla chips)
  • 1/3 lb ground pork
  • 1/3 lb lean ground beef
  • 1 T chili powder (or more, to taste)
  • 2 t garlic powder
  • 1 t salt
  • 2 T minced onion (the dehydrated kind in the spice aisle)
  • 12 oz package of shredded Cheddar/Monterey Jack cheese mixture
  • 1/4 c diced green peppers
  • 1/4 c sliced black olives
  • 1/4 c canned black beans
  • 1/4 c sliced mild jalapenos
  • 1/2 c thinly sliced romaine lettuce
  • 1/4 c pico de gallo (I highly recommend the homemade pico de gallo from Whole Foods)

Restaurant Style Nachos Directions

Preheat oven to 400 degrees. Cook ground beef and ground pork, seasoning it with the chili powder, garlic powder, minced onion and salt. Line a cookie sheet with foil (for easy clean up) sprayed with a non-stick spray. Place a single layer of tortilla chips on foil. Next, layer meat mixture over chips. Top with shredded cheese. Sprinkle with green peppers, black olives, black beans, and jalapenos. Cook for 6-7 minutes. Take out of oven and sprinkle with lettuce and pico de gallo. If you want some kick, add some Cholula Hot Sauce. Restaurant-style nachos are the best.

Cinco de Mayo Recipes – Salsa Guacamole Dip Recipe

Salsa Guacamole Dip Recipe Ingredients
  • 6 ripe avocados, halved, pitted and peeled
  • 1/4 cup lemon juice
  • 1 cup salsa
  • 2 green onions, finely chopped
  • 1/4 teaspoon salt or salt-free seasoning blend
  • 5 cloves of garlic, minced
  • Tortilla chips
Salsa Guac Dip Directions

1. In a bowl, mash avocados with lemon juice. Stir in salsa, onions, salt and garlic. Serve immediately with tortilla chips.

Cinco de Mayo Recipes – EASY Green Avocado Salsa Recipe

Easy Green Avocado Salsa Recipe Ingredients
  • one avocado, pitted and peeled
  • about a half cup of Salsa Verde (whatever your favorite brand is)
Easy Green Avocado Salsa Recipe Directions

Mash avocado in a small bowl. Add salsa verde. Mix well. Enjoy!

Cinco de Mayo Recipes – Green Tomato Salsa Recipe

Green Tomato Salsa Ingredients
  • 4-5 lbs green tomatoes, chopped small (as you prefer for salsa)
  • 1 large yellow onion, chopped (about 4 cups)
  • 1-2 jalapenos, chopped with seeds (depending on how spicy you want it)
  • 6 garlic cloves, minced
  • 1 cup fresh cilantro, chopped
  • 1 lime squeezed for juice
  • 1/2 cup vinegar
  • 1 tablespoon salt
  • 1/2 tablespoon cumin
  • 2 teaspoons pepper
  • 1/4 teaspoon cayenne
  • 1 – 2 teaspoon sugar
Green Tomato Salsa Directions

Combine everything in a large pot, mixing well. Bring to a boil, reduce heat to simmer, and cook covered for about 1 hour, stirring occasionally. For canning, bring salsa to a boil and follow canning directions, being sure that jar edges are clean before hand tightening lids and there is about 1/2 inch empty space in the top of the jar.

Check lids for seal, and refrigerate any unsealed jars.
